Rick and Michael Mast are the instantly recognizable bearded brothers behind the eponymous craft cocoa empire. Handpicking beans from Madagascar, Papua New Guinea, Belize and other cacao-rich regions, they veer away from mass-production, favoring instead old-fashioned machinery, prolonged aging periods, and a personal touch of artistic wrapping paper created by an in-house designer. The recently expanded Brooklyn shop also serves as a factory where customers can observe the precision and teamwork that go into making these delicious, innovative bars.
